Monday Mayhem

Best quick instant "pick-me-up" I have just discovered...

This weekend Mike & I went shopping at Costco.


I love walking into Costco with Mike because he gets to flash his "Executive Member" card and it makes me feel fancy and elite.

While there we picked up a HUGE box of Kellogg's FiberPlus Antioxidant Bars in Caramel Coconut Fudge.

It's always a risk buying a new flavor of anything at Costco, because if you don't like it you still have 7 bazillion left to eat... however that flavor just sounded TOO delicious not to try!!

and it was.


Delicious, that is.  Seriously... keep up people, it's only Monday.


Anywho --> the best quick instant "pick-me-up" is a 2-fer combo:  Hot Coffee + Caramel Coconut Fudge Bar.


Heaven.






Which is good because this morning seemed especially difficult to get out of bed.

I later found out that's because my crazy roommate thought it was a good idea to set our AC to 70 degrees... freezing. {thankyouNicole}


I am not sure what it is about feeling cold but I cannot leave the comfort of my sheets when I think it's cold outside - it takes every ounce of willpower I have in me to do so.








So in other news, I've been trying to incorporate a whole bunch more veggies into my life especially since the changing weather (woohoo no more 100+ degree days!!!) is when you're most likely to get sick and I refuse to get sick... so in addition to the extra Antioxidants from my new favorite Fiber Plus bars I whipped up a HUGE batch of Andioxidant Salad -- Recipe from Oh She Glows.




Let me tell you... I should be OXIDANT free






Bahahaha take that you stinky oxidants!!!








*AntiOxidant Salad*


Only, as usual, I didn't print the list so I just grabbed what I remembered at the grocery store... here's her recipe including what I ended up with:


Ingredients:
2 heads broccoli (1 bunch), stems removed <--large bag broccoli/cauliflower
1 head cauliflower, stems removed
2.5 cups shredded carrots <-- bag of shredded carrots
1/2 cup sunflower seeds
1 cup currants
1/2 cup finely chopped fresh parsley
1/2 cup raisins 3/4 cup craisins
4-6 tbsp fresh lemon juice, to taste <-- juice from 2 large lemons
kosher salt, pepper 
kelp granules or Herbamare (optional), to taste <--what??
Pure maple syrup, to drizzle on before serving <--totally forgot but may try next time!
+ 3/4 cups Reduced Fat Feta Cheese Crumbles (bc I love cheese)


So really I guess my antioxidant salad was just inspired by her Detox Salad (since I can't seem to stick to a recipe for the life of me) but I give her all the credit!  Check out her recipe and how to throw the salad together here


Mike and I seriously made *so* much of this salad you're going to see it pop up in a lot of my meals!!






Baked Salmon w/Lemon Pepper
Scoop of my *favorite* mashed potatoes
Antioxidant Salad
(I know it's not on my place yet but trust me I ate a ton!! I just don't like when my food mixes together so I ate the fish and potatoes first! lol)
Ice Cold Mug from freezer w/ MGD 64 = best way to start a weekend.


I love that Mug. I picked in up for Mike at the airport in Maryland during a work trip.  I'm a sucker for things with funny phrases -- in fact, one of my favorite cups states: "I'm really easy to get along with, Once you learn to worship me"


I can't be the only one...

I need to make that antioxidant salad soon--it was sooooo goood!
And YUM I really want to try that granola bar! Right now I am addicted to the KIND granola bars.. My two favorite are Blueberry Pecan
and Almond and Coconut
And yes.. I love any kind of drink that has a cute name(:(:
